A few 'meaty' words

Andrew Duff and his father Rory.

A few words from Andrew Duff:

MACDUFF 1890 is a 4th generation family business that has its origins dating back to 1890.

Our premium beef comes from our Producer Group; a small fraternity of farms. All members of the group are family farms that span back several generations.

In the current climate of global environmental issues, Scottish meat production is amongst the most environmentally friendly and sustainable in the world. Scotland’s landscape and climate are unique! Much of Scotland’s farmland is unploughable and unsuitable for crops, but ideal to grow grass and our climate means we are rarely short of water. That grass – which we can’t eat - is converted by Scotland’s cattle and sheep into some of the tastiest, nutrient rich beef, milk and lamb in the world.

We only buy cattle that have been grass fed. This natural diet is supplemented with root crops and grass silage. Cattle must have roughage to ruminate, which is good for their guts. In turns it affects the taste. With MACDUFF you get beef prepared like it was in days gone past which melts in the mouth.

We select from a range of top-quality breeds like Shorthorn, Luing and Belted Galloway, Dexter and more.

All prime cuts we produce are matured on the bone to ensure tenderness. We believe dry ageing really contributes to the richness and succulence of the meat creating beef like that our ancestors eulogised over.

We have a great working relationship with our customers, including McCaskie Butchers in Wemyss Bay who butcher our native breed beef down to smaller restaurant sized cuts. This fantastic partnership has allowed our beef to be featured on some of the finest menus in Scotland including l'escargot bleu.

Winning partnerships, a few words from Nigel Oven of McCaskie’s Butcher:

L’escargot bleu over the last couple of years have formed an enviable relationship with McCaskie’s Butchers. Since 1935, when the current owner’s grandfather started the business in the small coastal village of Wemyss Bay, it has remained true to its original values of all sourcing the very finest Scotch beef, lamb and pork.

Now operating from a fully approved cutting plant (behind the original shop), McCaskie’s specialises in sourcing the very finest native and heritages breeds from an exclusive farms group specialising in finishing grass fed beef.

Over the years McCaskie’s has become one of the countries most respected and award winning butchers distributing their products over the UK.

Our wonderful relationship with Fred means we are only a quick (or not so quick) chat away from getting not only great meat, but meat with integrity and a story.
